Chilled Pea and Mint Soup with Garlic Croutons (adapted from a Gourmet Traveller recipe)(Serves 8)I pre-made this on the morning of the dinner party, it makes sense, as the soup needs time to chill anyway. For the soup2 tbsp olive oil20gm softened butter1/2 a medium sized brown onion, coarsely chopped3 garlic cloves, coarsely chopped3 cups of vegetable stock (try to use the liquid variety if you can)1 kg frozen peas, defrosted1 1/2 bunches of fresh mint, coarsely chopped2 tbsp of creme fraiche (you can use the rest of the punnet to serve or use some thickened cream- as pictured, drizzled in a circle)2 tbsp lemon juiceSalt and pepper for seasoingFor the garlic croutons.
