So this meal came about from returning to the Pyrmont Grower’s Markets and being surrounded by so much fresh produce. I met a lady on the way into the market who had also driven at a ridiculous hour from Terrigal and I asked her what she was selling – she was working for a guy from Newcastle who makes pates and insanely divine salamis. I could not resist and bought the chilli salami – more out of budget as this was their cheapest, and most punchy flavoured one. They were all heavenly but I wanted something with bite. SALAMI, CHERRY TOMATOES AND ROCKET PASTA – THE RECIPE And then I started thinking “how the hell will I cook it?”. I then saw the green grocer stall had some superb little baby cherry tomatoes and another green grocer had some awesome rocket for $2- a bunch – done deal – the pasta dish came about. This one was damn easy and cheap and required only four ingredients. SALAMI, CHERRY TOMATOES AND ROCKET PASTA – THE RECIPE YOU WILL NEED: 1) Some nice salalmi – this guys salami was more a chorizo or kransky size and like mentioned I got the chilli one and chopped into chunky bits 2) I halved all the baby cherry tomatoes 3) Then I roughly chopped up half the bunch of rocket 4) You also need pasta and olive oil and that’s it! YOU WILL NEED TO: 1) Prep all the ingredients and have them ready 2) Warm up a large frying pan at the same time you bring some salted water to the boil for the spaghetti (or use whatever pasta you want) 3) As you put the pasta in to the boiling pot of water pour in half a tablespoon of olive oil into the frying pan and add the salami 4) Stir it until it starts browning and going a little crispy and then add the tomatoes and rocket and stir to combine 5) Lower the heat slightly and occasionally stir it until the pasta is ready SALAMI, CHERRY TOMATOES AND ROCKET PASTA – THE RECIPE 6) Drain the pasta and add to the frying pan with all the yumminess – stir/ toss to combine it 7) Serve in a large bowl and literally grate some big chunks of parmesan on top – Jamie Oliver would say to drizzle half a litre of olive oil over it here but there is so much oil that comes out of the salami this will not be needed 8) Serve with a nice red – I actually think a rose would be best with this 9) Enjoy the hell out of it by by The post SALAMI, CHERRY TOMATOES AND ROCKET PASTA – THE RECIPE appeared first on Spooning Australia.
